Pasta Carbonara

Red Devon is a farm to table Market, Cafe and Restaurant, using locally sourced, sustainable ingredients. All of our items are prepared in house, from the croissants to the ketchup to the bacon. We believe in supporting our local community of farmers and producers, since they in turn, support us.

Carbonara is one of my favorite dishes to prepare, we serve it throughout the year, changing components of the dish depending on what products are available. In the fall and winter mushrooms are always present, early spring ramps and pea shoots, in the summer we add english peas, it's all about what's in season!

PASTA CARBONARA Fresh Pasta

8 oz ’00’ flour
8 egg yolks
1 whole egg
1/2 T. olive oil
1 T. whole milk
1/2 T. kosher salt

-mix all dry ingredients
-mix all wet ingredients
-create a well with dry ingredients, pour wet into well
-start incorporating wet ingredients into the dry until you can knead.
-knead 12 minutes, or until smooth and elastic
-rest 1 hour
-roll pasta dough to desired thickness, and cut into desired shape.
-hold dusted in flour for 24 hours or freeze for up to 1 month.

Pasta Carbonara

6 oz. guanciale, pancetta or bacon
8 oz. sliced mushrooms, cremini, shiitake or a mixture of both
2 oz. sliced shallot
1 garlic clove, sliced
8 oz. shredded cheese
2 whole eggs
2 egg yolks
fresh herbs
pasta water
salt and pepper to taste

-render guanciale, in small amount of whole butter
-add shallot and garlic, cook on low until almost translucent, add mushrooms.
-season with salt and pepper.
-in separate bowl combine the eggs and 6 oz cheese.
-cook fresh pasta in boiling salted water, approximately 30 seconds, if using dried pasta follow instructions on box.
-add pasta to mixture in sauté pan, toss pasta with other ingredients, add 2 tablespoons pasta cooking liquid to eggs, stirring constantly.
-off the heat stream the egg-cheese mixture into the pasta, stirring constantly until a creamy sauce is created, if needed return pan to re-heat.
serve immediately with the remaining cheese.

Serves 4 as an appetizer, 2 as a main course
