Mexican Chocolate Pot du Creme

A little spicy, a little sweet, what could be better in a dessert? This recipe comes from Chef Christophe Jalbert at <a href="http://www.route7grill.com/&quot;target=&quot;_new&quot;>Route 7 Grill and is super easy and the adorable presentation makes you look like a master chef once finished. The chipotle powder really gives this dessert a kick and is a welcome dash of spice in a never-ending winter. Tip: fresh, locally sourced ingredients will make this dessert really special.

Ingredients

16 oz heavy cream
1/2 cup + 1 tablespoon granulated sugar
2 oz rum
1 teaspoon cinnamon
1 teaspoon chipotle powder
3 oz bittersweet chocolate (chopped)
6 egg yolks

Directions

Place the chocolate in large mixing bowl and set aside
Place the egg yolks in separate mixing bowl and set aside
Bring the heavy cream, sugar, rum, cinnamon and chipotle powder to a boil and pour over the chocolate
Once the chocolate is melted and fully incorporated, temper the egg yolks with the chocolate cream
Pour into 6 oz ramekins
Place ramekins in water bath and cover
Bake at 350 degrees for 40 minutes
