Apple Plum Crisp

4 apples pealed and roughly chopped  
3 plums roughy chopped 
3/4 cups sugar 
juice of half a lemon
1/2 cup water
1/2 tsp salt
1/2 tsp vanilla
1/2 stick of room temperature butter
2 cups oats, I use gluten free oats so everyone can enjoy.
1 cup brown sugar 
1tsp cinnamon

Cut apples and plums, add them to a bowl and squeeze lemon juice on them.  This keeps the apples from browning and gives a freshness to the mixture.  Add water, then add sugar and vanilla. Incorporate and pour into a large baking dish.  

In the same bowl add oats, brown sugar, salt and cinnamon.  Then roll up your sleeves and use your hand to combine the oat mixture with the soft butter.  You know it is mixed enough when the butter and oats are sticking together in a large mass .  Then crumble the mixture over the fruit.  If you find the crumble too dry, add more butter, too buttery add more oats, you really can't go wrong! 

Bake for one hour at 350'   

Serve warm with your favorite vanilla ice cream or home made whipped cream. If there is any left over, have it for breakfast the next day with yogurt!
