Simple Pound Cake

Simply put, I love to bake simple recipes from scratch, I use local eggs, fruits when in season, nuts and citrus! As a waitress and a hostess for many years, I always enjoyed seeing the happiness on someone's face when a nice dessert arrived at the table...it made me want to bake and see that face again as I do each week at the local farm markets.

Coco's Crumbs confections are available every Saturday morning at the Millerton Farmer's Market, at the Oakhurst Diner and by special order.

3 cups of unbleached all purpose flour
2 cups of raw sugar
3 teaspoons of Baking Powder
½ teaspoon of salt
1 cup of butter
1 cup of sour cream,softened!
½ cup of milk. it can be whole or low fat!
1 teaspoon of Pure Vanilla extract
1 teaspoon of Pure Almond Extract,never imitation!
6 farm market eggs

Combine dry ingredients in mixer, add butter and sour cream, milk , vanilla , almond extract. Beat all together for a few mins,stop and scrape your bowl, then turn mixer speed up adding eggs one at a time. Mix about 15 seconds or so. After each addition, turn speed back down and beat a few, more seconds.

Pour batter into a greased and floured 10 inch tube pan. Bake at 350 for around 1 hour and 15 minutes or until a toothpick inserted comes out clean! Cool it on a wire rack.

You can add many ingredients: toasted sliced almonds, roasted pistachios. Or fresh lime,orange or lemon zest...and make a fresh citrus glaze of your choice!
